On the Stock tab press Adjust stock. Choose the Product and Location, enter the Change (positive to add, negative to remove, for example -2 for damaged) and the Reason (for example "Stocktake correction"), then press Save adjustment.
The Stock tab shows Stock by product and Where everything is: each location, lot, expiry date and quantity.
